Apple Cinnamon Oat Waffles

This family favourite is sure to please with the familiar flavours of apple and cinnamon we all love. Fibre-filled and nutrient-packed these waffles make a great weekend treat for breakfast or dessert – you can even freeze them for later!

Ingredients

  • ¾ cup of rolled oats
  • 1 ½ cups of flour
  • ¼ cup LSA (If you like more LSA, just reduce the amount of oats and top up with LSA)
  • 1 teaspoon baking powder
  • 4 teaspoons cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground nutmeg
  • 2 large eggs
  • 1 ½ cups buttermilk
  • 4 tablespoons vegetable oil
  • 2 tablespoons brown sugar or honey
  • 1 teaspoon vanilla extract
  • 3 apples – grated

Method

  1. Stir together flour, oats, LSA, baking powder, cinnamon, baking soda, salt and nutmeg in a mixing bowl.
  2. Beat eggs in a separate bowl. Stir in buttermilk, oil, sugar and vanilla.
  3. Add liquid mix to dry mix, stirring just until blended. Fold in grated apple.
  4. Cover and let batter sit for 1 hour before using (or leave overnight and add the grated apple fresh in the morning).
  5. Preheat waffle iron.
  6. Pour batter into waffle maker and bake for around 3 minutes per waffle, or until light goes green.

Serving suggestions

Great with yoghurt, maple syrup & freeze-dried raspberries or for a lower sugar alternative try lemon juice instead of the maple and extra cinnamon. Great to freeze and toast at another time.
